For the past few weeks, I have been developing a course entitled, ”The Cheeses of France”. For this course, I have been doing quite a lot of research – on buying cheeses, on tasting them, on storing them, etc. As a result, I have re-discovered an old favorite triple-cream cheese that is unbelievably rich and delicious. It is called Pierre-Robert and is made in the Champagne region of France. Pierre-Robert is a cow’s milk cheese that was first made by two cheese-making friends in the 1970′s. Tired of waiting for their cheese to fully ripen, they decided to try some when it was still young, and they loved it. Then, to make it even better, they added a bit of creme fraiche to it! The result was 75% butterfat and an absolutely amazing cheese! Try it with a slice of nice, crusty country bread and a glass of French champagne. You will love it!
